Uses

Pine / Matsutake are a highly sought after mushroom used mainly in Japanese cuisine. Pine mushrooms have a pleasant almost spicy aroma with a sweet nutty flavour. Pine mushrooms flavour lends well the chicken, fish and rice especially when grilled and marinated.

Storage/ Handling


As for all mushrooms, Pine / Matsutake should be stored in a paper bag or breathable container in the refrigerator between 2 - 4 degrees Celsius. 

Pine / Matsutake should last a week or so in the fridge but are best when used fresh within the first 2 days of receiving them. You should avoid washing mushrooms because they will take on excess water. Brush clean with a scrub brush or clean towel to remove dirt and debris.

1 1/2 cups Konbu dashi

1 tsp Soy Sauce

1 tsp Sake

1/2 tsp Salt

5 sprigs Mitsuba (chopped)
