Fresh Chanterelle Mushroom Appetizers
Ingredients
100 grams fresh
Chanterelle mushrooms sea salt/ fresh cracked pepper to taste
40 ml extra virgin olive
oil ˝ sweet onion, sliced
50 ml sun-dried tomatoes,
cut into strips 25 ml fresh flat leaf parsley, chopped
1 lemon,
juiced assorted fancy crackers
Method
- Heat a skillet on
medium- high heat. Add onions, season, and sauté until lightly golden. Add
chanterelles, season, and sauté for approx 5 minutes.
- Remove from heat and
allow to cool. Fold in parsley, sun-dried tomatoes, and the juice from a
lemon. Chill for 1 hour.
- Place on top of
assorted crackers or toasted bread squares.
- Serves 2.
- You can add crispy
bacon, and or fresh baby shrimp.
